Sandra’s Garlic & Lemon Hummus

My neighbor Sandra brought me over some hummus one afternoon and it was simply the best hummus I had ever had. Today we got to make it together and it was so delicious and so easy to make. She makes her tahini from scratch as well, which is probably why it tastes so great. She also likes to add in roasted garlic but it is just as good with regular garlic cloves.

Prep time: About 10 minutes

Kitchen tools: Food processor

INGREDIENTS

1 can of organic chickpeas (strain and save the liquid)

2-4 large garlic cloves

1/4 cup tahini (can be easily made with sesame seeds and oil)

1/4 cup lemon juice (may need more based on flavor preference)

2 tbsp EVOO

Salt to taste

Paprika to garnish

Parsley to garnish

INSTRUCTIONS

Strain the liquid from the chickpeas and set aside. Place chickpeas in a food processor and blend. Take a small spatula spoon and scrape the sides if needed. Add in olive oil and blend. Next, add in finely minced garlic and tahini and blend some more. While blending, add in lemon juice and salt to taste. Next, add in the liquid from the chickpeas. You can use water instead, but the chickpea liquid helps thicken it up. Now blend until desired texture of hummus is achieved. Keep in mind to not blend it too much that it becomes super thin and liquid. Once desired texture is achieved, taste test to ensure it tastes right for your palette. You may want to add more lemon, garlic, or salt. Once it is done, place in a bowl and dust with paprika and garnish with parsley. You can also place the lemon peels in it to act as a preservative. You can store in the fridge for about 5 days. Enjoy with vegetables, naan, or pitas!
