Summer Burrata Salad

I eat some variation of this salad weekly. It’s so delicious and easy to make. I always have tomatoes and mozzarella on hand, so I often times substitute the burrata with mozzarella cheese. Either one is great for this recipe. The peaches add the perfect summertime sweetness but the salad can easily be made without them. This salad is simple to put together and is always a fan favorite. If you don’t have fresh basil, you can substitute with dried basil or even oregano.

INGREDIENTS

Cherry tomatoes 

1/2 Red onion

1 Peach

Basil 

1 pkg Prosciutto 

Buratta (Buf Creamery 100% grass fed is my favorite)

Olive Oil 

Salt n Pepper 

Balsamic Glaze 

INSTRUCTIONS

Wash all ingredients very well. Chop up all ingredients into bite size pieces. Mix tomatoes and onion in a bowl with olive oil and salt n pepper. Pour onto a serving dish and add the remaining chopped ingredients. Toss together. Top off with fresh burrata cheese and drizzle the balsamic glaze. Serve by itself or with crostini’s or crackers.
