Oysters

I aim to eat oysters weekly. Oysters are packed with minerals that the body needs and are great for fertility. I prefer to enjoy them raw with toppings like mignonette, cocktail sauce and horseradish. I get that they aren't a fan favorite, but if you have not tried them yet, do it! I recommend trying them at a restaurant or going to Whole Foods on Fridays and making them yourself. On Friday’s, Whole Foods has 12 oysters for $12 and they shuck them for you, or you can even enjoy them at Whole Foods in their mini restaurant/bar area. If they do not shuck them for you, good luck! My fiancé and I tried shucking them ourselves and we both cut our fingers. I would just go to a restaurant at that point or learn how to shuck and have quality materials to do so.

INGREDIENTS

Oysters (12 for $12 on Friday’s @ Whole Foods) 

1 Shallot

2-3 tbsp Rice Wine Vinegar

1-2 tbsp Mirin

1 lime

Cilantro  

Cocktail Sauce (I love Whole Foods brand or Trader Joes)

Raw Horse Radish

Lemon (optional) 

INSTRUCTIONS

Wash shallot and cilantro. Finely chop shallot and cilantro and add to a small serving bowl. In this bowl, add vinegar, mirin, and squeeze fresh lime juice and mix all together. Drain out excess liquid from oysters and detach the oyster from the shell and place back into the shell. Top each oyster with cocktail sauce, freshly made mignonette mixture, raw horseradish, and freshly squeezed lemon if desired. I always enjoy mine with a mocktail on Friday evenings with my fiancé, and I make it a point to cheers our oysters. Enjoy the oysters and all the added benefits from consuming all the minerals.
